{"id":3467,"date":"2025-10-06T13:59:18","date_gmt":"2025-10-06T13:59:18","guid":{"rendered":"https:\/\/bangbizarre.com\/index.php\/2025\/10\/06\/ant-made-yoghurt-on-sale-at-michelin-starred-restaurant\/"},"modified":"2025-10-06T13:59:21","modified_gmt":"2025-10-06T13:59:21","slug":"ant-made-yoghurt-on-sale-at-michelin-starred-restaurant","status":"publish","type":"post","link":"https:\/\/bangbizarre.com\/index.php\/2025\/10\/06\/ant-made-yoghurt-on-sale-at-michelin-starred-restaurant\/","title":{"rendered":"Ant-made yoghurt on sale at Michelin-starred restaurant"},"content":{"rendered":"<p><b>2025-10-06 13:59:17<\/b><br \/>\n<BR>Yoghurt made with Ants is being served at a Michelin-starred restaurant.<BR><br \/>\nResearchers have discovered that live ants can be used to ferment milk into yoghurt.<BR><br \/>\nScientists from the Technical University of Denmark (DTU) found that red wood ants contain natural bacteria, acids and enzymes that can turn milk into a tangy, herbaceous yoghurt. <BR><br \/>\nThe research team, led by Dr. Veronica Sinotte of the University of Copenhagen, was inspired by old Balkan and Turkish traditions of using ants in dairy-making.<BR><br \/>\nDr. Sinotte, lead author, said: &#8220;We dropped four whole ants into a jar of warm milk by the instruction of Sevgi\u2019s uncle and community members.<BR><br \/>\n&#8220;That\u2019s an early stage of yoghurt, and it tasted that way as well.\u201d<BR><br \/>\nFurther analysis revealed that ants produce lactic and acetic acid bacteria &#8211; similar to those found in sourdough &#8211; as well as formic acid, which helps coagulate milk proteins.<BR><br \/>\nWorking with Copenhagen\u2019s two-star Michelin restaurant Alchemist, the team used their findings to create experimental dishes including mascarpone-like cheeses, cocktails and ice cream sandwiches infused with \u201cant yoghurt.\u201d<BR><br \/>\nDr. Leonie Jahn of DTU said the research &#8211; published in the journal iScience &#8211; \u201cshows that ancient food traditions can uncover lost biodiversity and new flavours.\u201d<br \/>\n<br \/><a href=\"https:\/\/bangbizarre.com\/\" target=\"_blank\"> Visit Bang Bizarre (main website) <\/a><br \/>\n<br \/><script src=\"https:\/\/geo.dailymotion.com\/player\/xtbac.js\" data-video=\"\"><\/script><\/p>\n","protected":false},"excerpt":{"rendered":"<p>2025-10-06 13:59:17 Yoghurt made with Ants is being served at a Michelin-starred restaurant.
